Pasta: Chile-Oil Gemelli Salad

YIELD 2 servings main course, 4 servings side dish

INGREDIENTS

INDIVIDUALLY (ready to use):
4 ounces gemelli

BOWL:
1.5 tbsp chile oil with crunchy garlic
1/2 tbsp pure sesame oil
1/2 tsp Sichuan chile oil, or to taste
1/2 tsp soy sauce
2 scallions, sliced
1 large carrot, shredded

GARNISHES (optional):
chopped peanuts
store-bought fried shallots
peas
fresh cilantro

PREPARATION

1. Cook the pasta.

2. Drain and add pasta to BOWL. Stir well and let sit on counter for at least 30 minutes.

3. Garnish as desired.
